Is it then better just to keep on submitting to the same article directory like Ezine which has a high PR.....or spreading it over several? My thoughts on asking this question is that do the extra links from Ezine count from the additional articles to the first one - or are the additional links just for traffic after you have submitted your first article?

I assume that you should research the PR of where you are submiting to ensure that you are getting the best quality backlink as one PR2 backlink is much better than two PR1 backlinks.

There is so much background work which needs to be done for the submission of 1 post to ensure good SEO.

Article submissions will serve you better than being too stretched out over too many social media apps. It will also give you content for your blogs and tweets.
